About:

Named after the Flat Rock Creek, which runs just south of our farm, and patterned after the French Mountain cheese "Abondance," Flat Rock is a firm, yet supple, and slightly grainy cheese with a smooth amber-colored rind. It has an assertive aroma and an intensely fruity, buttery and hazelnut flavor, with a balance of acidity and sweetness and a lingering aftertaste. You will unearth a fragrance of bright vegetation as you slice the cheese.

Uses: Flat Rock pairs well with fresh fruits, mixed with other cheeses in fondue, and on a sandwich or a cheese plate. It goes nicely with Malbec and Cabernet Sauvignon as well as stout beers, pale ales, Merlot, Riesling or cider.
